Foundations


If you have ever felt anxiety from opening your refrigerator because you had no idea of what to cook, have been paralyzed by the sea of options at the grocery store, or simply want to make more than a meal out of dinner, the Foundations experience is for you.

The Foundations experience tackles the trepidation that beginner cooks experience when the desire to expand their dinner repertoire is met with the uncertainty and resistance that naturally occurs when humans try new things.

We provide practical and personalized tools and processes that allow you to grow as a cook, without being confined to following recipes. The experience will also address the how and why of food prep so you can cook confidently and creatively from a well thought-out pantry and meal plan. You will also develop skills that empower you to adapt your meal plans to your ever-changing schedule.

Expansions


For home cooks who have some experience in the kitchen but are eager to expand their skills and knowledge base, the Expansions experience is a customized exploration of particular cuisines and dishes. You’ll practice combining cooking techniques and developing flavor profiles from scratch. The Expansions experience concentrates on two primary objectives:

Explore Global Cuisines

Explore the flavor profiles of each culture and learn how to build dishes out of those profiles. Learn how to execute signature dishes from various cultures. Learn how to infuse flavor profiles into staple dishes to create more variety in dishes you already feel comfortable with.

Improving Techniques

Improve your comfort and skill level of several less-often-used techniques, including pressure cooking, poaching, braising, and broiling. Practice combination cooking to enhance the flavor and texture of dishes.

Cooking foR GROUPS


Cooking foR GROUPS


Take the guesswork, pressure, and intimidation out of hosting by learning how to efficiently plan, prep, and cook for large groups. The Cooking for Parties experience will teach you to determine how much food to buy, how many dishes to make, and how to budget and plan a menu that can be executed based on your cooking space, schedule, and storage.

Once a solid plan is in place, it’s time to prep. Learn what can be done ahead of time, how to adjust recipes to use ingredients in multiple dishes, as well as time- and energy-saving tips for volume cooking. The cooking portion of this experience can be broken into three or more personalized sessions.

Appetizers | From creative starters to classic offerings, learn how to execute on a “wow” level with fresh ingredients and well-built flavors. (Can be the focus of one or more sessions.)

Desserts | Dessert sessions will help you find the sweet spot for you and your guests. Learn how to make whipped cream and meringues, classic baked goods or sorbet from scratch. (Can be the focus of one or more sessions.)

Holiday Parties | Are you hosting Thanksgiving, Christmas or Passover for the first time? We will walk through each step required to successfully implement all of your family traditions. We can’t help with the uncomfortable dinner conversation, though. You are on your own there.

Wine or Cocktail Parties | Focus on wines from around the world, or zero in on a particular region. We’ll teach you how to pick cheeses, fruits, chocolates, and meats that pair beautifully with your wine. Or host a Mad Men-inspired cocktail party and learn the classics or a new drink with a twist. We’ll help you match your new favorite cocktails with some nostalgic appetizers or grilled goodies.

Grilling Out | Speaking of the grill, sometimes the occasion calls for more than burgers and hot dogs. Avoid biting into a piece of overcooked meat or serving guests undercooked barbecue chicken. Learn tips and tricks for keeping food at the perfect temperature and learn some fun and creative options for vegetarians or health-conscious guests.

Meal Planning & Cooking for Families


Meal Planning & Cooking for Families


As the father of three kids, I understand the exhaustion, expectations, and guilt that too often make dinnertime stressful. OGO was founded to make meals a more meaningful part of our everyday life by adding value and reducing the stress home cooks feel in the kitchen. Improving meal planning and cooking great meals for your family only requires new perspective, new skills that match dinners with priorities, and a realistic approach full of grace and a little patience.

We will sit down and help you identify solutions for your dinnertime dilemmas. Sessions can focus on menus and techniques that match your schedule or finding creative and healthy alternatives that kids, and parents, can appreciate. We’ll also teach you new skills that make meals available and efficient. Sessions can also include practical meal planning tools, budgeting help, building an effective pantry, or learning to cook independent of recipes by building flavor profiles.

Nutritional Cooking


Nutritional Cooking


The Nutritional Cooking experience will empower you to take control of your health and nutrition by learning to cook whole foods in simple, creative ways.  We will focus on fruits, vegetables, lean proteins, and even desserts.  Throughout the experience, you will discover diverse meal plans that address specific nutritional goals or dietary restrictions.

This kind of life change takes effort, but it can be done in a way that fits your schedule and budget with enough flexibility to handle the “curveballs” of real life. Like most adventures, it begins with a plan. We will map out a personalized and practical menu plan that matches your schedule and nutrition needs. It will stretch your skills and your palate to produce the variety and flexibility necessary for sustained change.

Fruits and Vegetables
The plan will start with making peace with fruits and vegetables. There is just no way around it. While a plant-focused diet is inescapable, the good news is it can be delicious. Seriously. We can do this. Soups, salads, sides, and salsas will give us plenty of flavor and variety.

Lean Proteins
We will identify either lean animal protein or a vegetarian approach to keeping our protein levels appropriate for our goals. This really is about techniques used to keep meat moist and flavorful, learning healthy and delicious sauces, and diving into seafood. Vegetable proteins and fiber will be a focus for most clients, vegetarian or not. Rice and beans, lentils, and quinoa are staples for a reason. You will learn to prepare them simply and quickly, with plenty of flavor and nutrients.

Desserts
Yes, we will deal with dessert. It won’t be easy, but we will satisfy your sweet tooth without heavily processed or artificial sweeteners. It takes an open mind and a little bit of compromise, but change is why we are here.

Dietary Restrictions
Food allergies and intolerances do not mean you must give up on great food. In addition to general nutrition and vegetarian options, we can plan sessions that address specific dietary restrictions including: gluten free, dairy free, vegan, diabetic, anti-inflammatory, paleo, low sodium, and high protein/weight gain plans.

The Nutritional Cooking experience provides highly practical, realistic lessons but should not take the place of a doctor or nutritionist’s expertise.
